Ingredients
- 6-7 ears fresh corn (Jersey corn if you know what’s good)
- 1 pint cherry tomatoes, halved
- 1lb green beans, trimmed
- 1 bunch scallions, thinly sliced
- 1 handful fresh basil, torn
- 2 tbsp chopped chives (or sub parsley or cilantro)
- Optional: 1–2 ripe peaches, thinly sliced
For the Lemon Vinaigrette
- Juice of 1 lemon
- ½ cup extra virgin olive oil
- 1 tsp honey
- Salt & black pepper, to taste
