Alright, olive gorlies, buckle up - it's time to talk about citrus olives. These olives are the life of the snack table party and totally unputdownable. The flavor the orange peel infuses into them is subtle but shocking in the most perfect way. The chili flakes add just the right hint of spice and fresh herbs round everything out. So, to all my olive-loving ladies (and gents), get ready to eat the entire bowl in one sitting.

INGREDIENTS
  • 1 cup castelvetrano olives
  • 1 cup kalamata olives
  • 1 orange, zest peeled into 3-4 slices with a vegetable peeler
  • Squeeze of lemon
  • Splash of red wine vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon chili flakes
  • Parsley, finely chopped
  • Fresh oregano, about 1 sprig, finely chopped (1 teaspoon if using dried)

 

Note: the herb measurements do not need to be exact, use whatever you have on hand

INSTRUCTIONS
  1. In a bowl, whisk together lemon, splash of red wine vinegar, olive oil, parsley, oregano, chili flakes, flakey sea salt.
  2. Add in olives and orange peel.
  3. Cover and marinate in the fridge for at least one hour. If marinating for longer than two hours and bring to room temperature before serving to loosen up the olive oil, as it will harden in the fridge.

Optional: serve with fresh springs of herbs (thyme looks beautiful!)
