gluten free granola

Listen, I'm not going to tell you what to do but stop buying store bought granola. It's filled with sugars, seed oils, and whatever else they put into processed foods these days. This homemade one is gluten-free, refined sugar free and just the right amount of sweetness. The toasted nutty flavor is everything you'll ever want. Top this on yogurt, smoothies or just snack on it right out of the jar.

INGREDIENTS
  • 4 cups quick cooking gluten free oats
  • 1 cup pecans, roughly chopped
  • 1/2 cup walnuts, roughly chopped
  • 1/2 cup pepitas (pumpkin seeds)
  • 1/4 cup quinoa
  • 1/4 cup coconut flakes
  • 1 teaspoon sea salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup pure organic maple syrup
  • 1/2 cup melted coconut oil
  • 1 teaspoon vanilla
INSTRUCTIONS
  1. Preheat oven to 350°. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine oats, chopped nuts, seeds, quinoa, coconut flakes and salt. Mix together until combined.
  3. Pour maple syrup, coconut oil and vanilla into the dry nut and oat mixture. Mix well with a spatula, coating entire mixture. Spread granola onto baking sheet in an even layer.
  4. Bake until lightly golden, 30-35 minutes, pressing down with a spatula halfway through.
  5. Let granola cool – about 1 hour – then break into pieces. Store in air tight container.
