carrot ginger soup

A soup cozy enough for fall and one that will heal you from the inside out - it's a detoxer for sure. Perfect to prep for weekday lunches following an indulgent football Sunday. Use as much or as little ginger as you like. I love the spice and zing the ginger gives so I add a ton. You can also add leeks, shallots, celery - use whatever you have that is currently being neglected in your fridge's produce drawer.

INGREDIENTS
  • 2 tablespoons olive oil or avocado oil
  • 1 medium onion, roughly chopped
  • 2 cloves garlic, roughly chopped
  • 1 tablespoon ginger, chopped
  • 2 pounds carrots, peeled and roughly chopped
  • 4 cups vegetable broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • Freshly ground black pepper
  • Optional toppings: coconut milk, cilantro, chives, chili oil, crispy shallots
INSTRUCTIONS
  1. Heat the oil over medium-high heat in a large pot. Add the onions and cook for 1 to 2 minutes or until translucent. Add the ginger and garlic to the pot and stir for another minute.
  2. Place the chopped carrots in the pot and stir to combine. Cook for 10 minutes, stirring often
  3. Add the broth, apple cider vinegar, salt and pepper to the pot. Bring to a boil, then cover and turn the heat to low for a gentle simmer. Cook for 20-30 minutes or until the carrots are soft when pierced with a fork.
  4. Turn off the heat. Blend the soup with an immersion blender or transfer the soup to a high-powered blender. *Do not blend hot liquid, it will explode on you!! Let the soup cool before blending!* Blend the soup until it’s pureed and smooth. If the soup is too thick, add additional broth to thin out.
  5. Serve with swirled coconut milk and garnish with crispy shallot, chili oil, and cilantro.
