The perfect solution for when you are delusional shopping and come home with 10 squashes. This one skillet dinner is perfect for a cozy week night meal and is ready in under 30 minutes. It's also great for leftovers the next day. One final note, do not skip the goat cheese!! Goat cheese is superior!! Enjoy :)

INGREDIENTS
  • 1 pound ground turkey
  • 1 butternut squash, cubed – about 2 cups
  • 4 oz goat cheese
  • 4 cups kale, roughly chopped (spinach works as well)
  • 1/2 cup chicken stock or vegetable stock
  • 1 large shallot, sliced
  • 1 cove garlic, finely chopped
  • 1 tablespoons olive oil or avocado oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • Fresh black pepper
  • Pinch of red pepper flakes
  • Fresh thyme or 1 teaspoon dried thyme
INSTRUCTIONS
  1. Heat olive oil over medium heat in a large skillet. Add the cubed butternut squash, shallot, garlic, and fresh black pepper. Sauté until fragrant, about 2 minutes. Add half the chicken stock and cover until the squash is fork tender, about 5 minutes. Remove the squash and shallot mixture, setting aside in a bowl.
  2. To the same skillet, add the ground turkey, salt, pepper, paprika and a pinch of red pepper flakes. Cook until no longer pink, about 3-5 minutes.
  3. Add the butternut squash back in with the chopped kale, stirring to combine. Add the remaining chicken stock and cover for another 5-7 minutes, until squash is softened and kale is wilted. If the mixture seems dry or is sticking to the skillet, add some additional stock.
  4. Remove from the heat. Crumble in the goat cheese and top with fresh thyme.
