This is one of my favorite ways to use up extra herbs you have from the grocery store or garden. Preserve leftover herbs by chopping them up, place them in an ice cube tray, filling each compartment with olive oil and then freezing. These herb-infused olive oil cubes can be used to enhance the flavor of roasted vegetables, as a dipping oil for bread, to season soups, chicken, fish, or pasta dishes. Perfect to have on hand when you forget to buy herbs or want to add a pop of freshness to any dish.

INGREDIENTS
  • Assorted herbs
  • Extra virgin olive oil
INSTRUCTIONS
  1. Wash, dry and finely chop the herbs
  2. Place herbs into ice cube tray and cover with olive oil. Freeze until solid and store in air tight container or freezer bag.
  3. Drop an herb cube into vegetables while roasting, chicken or fish dishes, pasta, etc.
