Pickled onions are one of my favorite ways to add a pop of bright flavor to any dish. They have a tangy and slightly sweet flavor, which makes them a popular add to so many dishes. My favorite ways to use them are on: avocado toast, burgers and sandwiches, tacos, and any grain or salad bowl.

INGREDIENTS
  • 1 red onion, thinly sliced (use a mandolin if you have one)
  • 1/2 cup apple cider vinegar
  • 1 tablespoon honey
  • 1 1/2 teaspoons salt
  • 1 cup hot water (not boiling)
INSTRUCTIONS
  1. Thinly slice the red onion and place in an airtight glass jar. These are my favorite for pickling.
  2. In a separate bowl, whisk together vinegar, honey, salt, and hot water until salt and honey are dissolved. Pour the hot liquid mix over the red onions. Set aside to cool to room temperature, about 1 hour then seal the jar and store in the fridge.
  3. The onions are ready to eat once they are bright pink and tender. This will be a few hours to overnight, depending on the thickness of the slices. Keep in fridge for up to 2 weeks.
