burrata salad

Based on my experience, a burrata platter will pretty much please anyone. This salad is simple but so stunning with a mix of fresh tomatoes in different colors and sizes. My obsession with fresh herbs continues here. I garnish with basil and chopped chives, but mint or oregano would be great additions too. And if you really want to put out a show stopper, add some crushed pistachios for a nutty crunch - totally optional but very delicious.

INGREDIENTS
  • 4 assorted heirloom tomatoes, sliced into wedges
  • 8oz fresh burrata
  • 6oz prosciutto
  • good extra virgin olive oil
  • basil
  • chives
  • sea salt
  • toasted bread for serving

 

Optional: toasted crushed pistachios

INSTRUCTIONS
  1. Assemble the sliced tomatoes and burrata on a platter. I like to tear my burrata but feel free to leave it whole. Layer on the prosciutto, drizzle with extra virgin olive oil, sprinkle with sea salt and top with basil and chopped chives. Serve as a side or with toasted bread for an appetizer.
