grain free superfood granola

I’ve been gate keeping this one for years and finally letting you all in on this superfood granola. This granola is grain free and made with nuts and seeds, and basically every superfood you've ever heard of. You can swap any of the nuts for whatever your preference is - just keep the amounts the same. And do not skip the freezer step!!! Very important for good granola chunks.

INGREDIENTS
  • 1/2 cup walnuts
  • 1/2 cup pecans
  • 1/2 cup hazelnuts
  • 1/3 cup pumpkin seeds
  • 1/3 cup cacao nibs
  • 1/3 cup coconut flakes
  • 3 tbsp flaxseeds
  • 3 tbsp chia seeds
  • 3 tbsp hemp seeds
  • 1 tsp cinnamon
  • Sea salt*
  • 1 tsp vanilla extract
  • 1/4 cup coconut oil, melted
  • 2 tbsp honey

*If any of the nuts or pumpkin seeds are salted I do not add any additional sea salt

INSTRUCTIONS
  1. Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.
  2. Using a food processor, chop nuts and pumpkin seeds until they are crushed down. Transfer to a mixing bowl. Add in the remaining dry ingredients and mix together. Add the vanilla, coconut oil and honey. Mix thoroughly, coating all of nuts and seeds.
    Tip: Measure and pour a 1/4 measuring cup of the coconut oil then fill the same cup half way (equivalent to 2 tablespoons) with honey. The residual coconut oil will help the honey slide out and not stick.
  3. Transfer mixture to a baking sheet and spread into an even layer. Place another sheet of parchment over the top and spread out using your hands. Remove and discard top parchment sheet.
  4. Bake at 325 for 15 minutes. Cool for 5 minutes then transfer to the freezer. Once the granola has set, about 20-30 minutes, break into chunks and store in the fridge.
