BBQ chicken is a classic recipe to have in your repertoire. It's great for entertaining, summer grilling or a weekly meal prep. I marinate the chicken in my own bbq sauce, but if you're tight on time feel free to use store bought sauce - no judgement here.

INGREDIENTS
  • 1 pound boneless chicken thighs
  • 1/2 cup coconut aminos
  • 1/2 cup ketchup
  • 1/4 cup chicken broth
  • 1 lime, zest and juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic salt
  • 2 garlic coves, finely chopped
  • 1 teaspoon fresh ginger, grated

 

for the mango salsa

  • 1 mango, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 jalapeño seeds removed, finely chopped
  • 1 shallot, finely chopped
  • Cilantro (A LOT!), chopped
  • 1/2 teaspoon salt
  • 1 lime, zest and juice

 

for the coconut rice

  • 1 cup long-grain white rice, jasmine or basmati
  • 1 cup coconut milk
  • 1/2 cup water*
  • 1/4 teaspoon salt

*note: if you are cooking the rice stove top, use 1 cup of water

INSTRUCTIONS
  1. In a mixing bowl, combine marinade ingredients. Reserve 1/4 cup for later. Add chicken thighs to the bowl and mix to combine with marinade. Refrigerate least 2 hours or as long as overnight.
  2. For the mango salsa, combine all ingredients together into a bowl. Mix to combine.
  3. Coconut Rice – Instant Pot: Rinse and drain the rice then combine all ingredients into instant pot or rice cooker. Pressure cook on high for 5 minutes, then let sit for 10 minutes before opening the lid. If you
    Coconut Rice – stove top: Rinse and drain the rice then combine all ingredients into a pot and bring to a boil. Turn the heat down to low and cook covered for 20 minutes. Remove pot from heat and let stand for 10 minutes, covered. Fluff with a fork before serving. Make sure to increase the water to 1 cup if you are cooking stove top.
  4. For the chicken, grill for 3-4 minutes per side until cooked through. Brush with reserved marinade while grilling. You can also sear the chicken in a pan.
  5. To build your bowl, start with a base of coconut rice. Add sliced chicken, mango salsa and garnish with extra cilantro and lime.
