Petition to stop buying store bought tzatziki!! This homemade version outshines any store bought alternative with its unmatched creaminess and fresh herbaceous flavor. Fresh dill brings a bright and tangy note, infusing the tzatziki with its subtle citrus flavor. The mint is totally optional, but in my opinion is the secret ingredient - so if you have some on hand don't skip it. This is one of my go to appetizers for entertaining because it is so easy, looks so impressive and the people go crazy for it.

INGREDIENTS
  • 1 cup full fat greek yogurt
  • 1/2 cup cucumber, finely grated with liquid squeezed out
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon white wine vinegar
  • 1/2 teaspoon salt
  • 1/4 cup dill, finely chopped
  • 1 tablespoons mint, finely chopped
  • Optional garnish: mint, dill, drizzle of olive oil
INSTRUCTIONS
  1. Start by grating the cucumber into a kitchen towel placed over a bowl. Squeeze the water out of the grated cucumber.
  2. In a medium size bowl, combine the yogurt, grated cucumber, lemon juice, vinegar, salt, dill and mint.
  3. Refrigerate until ready to use. To serve, spread your tzatziki onto a plate and garnish with more herbs and olive oil. Serve with crudité or crusty bread.
