INGREDIENTS
  • 8-10 Persian or pickling cucumbers
  • 4 cloves garlic, sliced thinly
  • 2 teaspoons whole peppercorns
  • 2 teaspoons whole mustard seeds (or coriander seeds)
  • Fresh dill
  • 2 cups distilled white vinegar
  • 2 cups water
  • 1 tablespoon salt
  • 1 tablespoon honey
INSTRUCTIONS
  1. Slice the cucumbers lengthwise then lengthwise again to make spears or thinly slice them horizontally to make dill pickle chips. These are my favorite for pickling.
  2. Divide the sliced cucumbers among the jars and add fresh dill, sliced garlic, peppercorns and mustard seeds.
  3. Heat water, vinegar, honey and salt in a saucepan over medium heat, stirring until the honey and salt dissolve, about 2-3 minutes.
  4. Pour the liquid over the cucumbers. Set aside to cool to room temperature, about 1 hour then seal the jar and store in the fridge. Wait at least 2 days before opening the jars. These will last in the fridge for several weeks.
