skirt steak tacos

Skirt steak is one of my favorite cuts of meat - it cooks up quickly and you'll get a perfectly cooked medium-rare to medium steak in 3-4 minutes a side. The outside gets crispy and charred and the inside is tender, juicy and the marbling brings killer flavor. The skirt steak soaks up this marinade like a total boss and pairs so well with avocado and a warm tortilla. And don't forget the chimichurri – that's the life of the party.

INGREDIENTS
  • 1 pound skirt steak (flank steak works too)
  • Tortillas (I use grain free, these are my favorite)
  • Avocado, cubed and gently mashed
  • Salsa

 

For the steak marinade: 

  • 4 garlic cloves, chopped
  • 1/2 white onion, sliced
  • 1 lime, juiced
  • 1/4 cup olive oil
  • 1/3 cup roughly chopped cilantro
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • Fresh black pepper

 

For the chimichurri:

INSTRUCTIONS
  1. Combine all marinade ingredients into a bowl. Cut your steak into large pieces that you can easily work with, and place in a storage bag, tray or bowl. Pour the marinade over and let it sit at room temperature for at least 15 minutes, or in the refrigerator for a few hours. Always bring your steak to room temperature before cooking and pat it dry – this will help the outside get charred and crispy.
  2. Grill for 3-4 minutes on each side until a charred crust forms. Throw the onions from the marinade on the grill too. You can also do this in a cast iron skillet. One your steak reaches an internal temperature of your ideal doneness level (I like 140-145℉ for medium) remove and set aside to rest for 5 minutes before slicing into bite size pieces. (this is me reminding you to slice against the grain!!)
  3. Heat your tortillas and top with avocado, steak and onions, salsa and lots of chimichurri.

 

I’ve recently started using a meat thermometer and it makes knowing when your food is done so much easier. This one is my favorite.
