My snickers date bark is my go to sweet treat that will satisfy your post chocolate dinner craving and something you can feel good about eating. It's free of refined sugar and gluten and made with 6 simple ingredients. I store this in an airtight container in the freezer and let it soften for a few minutes before eating.

INGREDIENTS
  • Medjool dates
  • Chocolate bar or chips (my favorite refined free chocolate is this one)
  • Creamy peanut butter
  • Honey
  • Roasted pistachios, or any nut of choice
  • Sea salt
INSTRUCTIONS
  1. Get a box or bag of pitted medjool dates. Open them up and flatten out on a baking sheet lined with parchment, smooth side down, cut side up. Place another piece of parchment over the top and press them down with the bottom of a glass or flatten with a rolling pin.
  2. Melt the chocolate in the microwave in 30 second increments, stirring each time until completely melted. Spread the melted chocolate on top of the dates.
  3. Add a few spoonfuls of creamy peanut butter and a drizzle of honey. Swirl the peanut butter throughout the chocolate using a knife or cake tester. Top with chopped pistachios or roasted peanuts.
  4. Pop the bark in the freezer for at least 2 hours, or until hard. Sprinkle with sea salt and cut into peices. Store in the freezer and let it sit out for a few minutes to soften before eating
