INGREDIENTS
the filling:
- 1 pound ground beef
- 1 pound pork
- 1 cup fresh grated parm or pecorino
- 2 eggs, whisked
- 1 teaspoon Italian seasoning
- 1/2 tsp salt
- Fresh black pepper
- 1/4 tsp red pepper flakes
- 2 cloves garlic, grated
- 1 cup cooked rice (basmati or white)
- 1 cup diced onion (1 small or 1/2 large)
- 1/4 cup parsley chopped
- 1/4 cup basil chopped
the peppers:
- 7-8 red bell peppers, depending on the size, cut lengthwise
- 2 cans 14oz tomato sauce
- Cheese for topping (pecorino/parmesan, mozzarella or provolone)
