Stuffed peppers: because winter deserves a little heat too – warm up your taste buds with these flavor packed peppers. They are so simple, great for entertaining, and come together in a single baking dish. They're like a cozy sweater for your appetite. Don't forget the crusty bread to soak up all the sauce!!

INGREDIENTS

the filling:

  • 1 pound ground beef
  • 1 pound pork
  • 1 cup fresh grated parm or pecorino
  • 2 eggs, whisked
  • 1 teaspoon Italian seasoning
  • 1/2 tsp salt
  • Fresh black pepper
  • 1/4 tsp red pepper flakes
  • 2 cloves garlic, grated
  • 1 cup cooked rice (basmati or white)
  • 1 cup diced onion (1 small or 1/2 large)
  • 1/4 cup parsley chopped
  • 1/4 cup basil chopped

 

the peppers:

  • 7-8 red bell peppers, depending on the size, cut lengthwise
  • 2 cans 14oz tomato sauce
  • Cheese for topping (pecorino/parmesan, mozzarella or provolone)
INSTRUCTIONS
  1. If you’re using uncooked rice, cook rice according to directions.
  2. Preheat oven to 375°. To prep your peppers, cut them lengthwise and remove the stems, seeds, and membranes while preserving the shape for stuffing.
  3. In a large mixing bowl, combine all filling ingredients. Using your hands, gently mix the filling together careful not to over-mix.
  4. Pour tomato sauce into a baking dish until the bottom is covered. Place the peppers in the dish and fill each pepper with the filling mixture. Pour the remaining tomato sauce over top of the peppers (you may not need all of it depending on the size of your peppers).
  5. Cover the baking dish with foil and bake for 40 minutes. Remove the foil and top with sliced cheese or more parmesean. Bake for an an additional 15 minutes.
  6. Let cool for a few minutes and serve with more fresh basil or parsley and crusty bread for soaking up all the sauce.
