INGREDIENTS
- 1 yellow onion, chopped
- 4oz can diced green chiles
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 3 cups shredded chicken (leftovers work great in this)
- 16oz can refried beans
- 6-8 burrito size tortillas
- 15oz jar green enchilada sauce
- 15oz jar red enchilada sauce
- sharp cheddar cheese
- Optional toppings: avocado, guac, pico, cilantro, sour cream or greek yogurt
