Traditional lasanga has it's place, but for an easy one-pan meal this spicy sausage lasanga is everything you need and more. I use chicken sausage to lighten it up, but it's just as delicious with Italian pork sausage. The secret ingredient here is lemon zest - trust me on this one. It pairs so well with the red pepper flakes and adds a pop of freshness to the dish. I recommend using fresh mozzarella for maximum gooey cheese pull, as pre-shredded mozz contains enzymes that prevent natural melting. Enjoy!

INGREDIENTS
  • 1 pound spicy Italian chicken sausage, casing removed (regular sausage works too)
  • 2 tablespoons extra-virgin olive oil
  • 2 shallots, finely chopped
  • 2 cloves garlic, finely chopped
  • zest of 1 lemon
  • 1/2 teaspoon red pepper flakes
  • 8 oz lasagna noodles (I use my favorite gluten free brand linked here)
  • 1 24 oz jar marinara sauce
  • fresh mozzarella, sliced and blot dry with paper towel
  • fresh grated parm
  • fresh basil to garnish
INSTRUCTIONS
  1. Preheat oven to 375°. In a 12-inch oven proof skillet heat olive oil over medium heat. Add the sausage and begin to break into bite-size pieces with a meat masher or wooden spoon. Cook until slightly browned and cooked through, 6-7 minutes.
  2. Add chopped shallots and garlic, cooking until translucent, another 2-3 minutes. Add in red pepper flakes and lemon zest, stirring to combine throughout the mixture. Transfer mixture to a medium bowl and turn off heat.
  3. Add a layer of marinara sauce to the bottom of the skillet and reserve 1/3 cup for the top of the lasagna. Mix the remaining sauce with the sausage. Layer the lasanga noodles on top of the marinara, breaking them up to fit the pan. Cover with half the sausage mixture, fresh mozzarella slice and fresh grated parmesan cheese. Repeat one more layer of noodles, sausage and cheese. Add a final layer of noodles, the reserved marinara sauce, fresh mozz and parm (no sausage on top layer). Add a drizzle of extra virgin olive oil.
  4. Cover with foil and bake for 55-60 minutes, until cheese is melted and golden. Let cool for 5 minutes and top with fresh basil to serve.
