prosciutto breakfast tacos

I've recently been in my herby egg & prosciutto breakfast taco era...and make it crispy prosciutto, get outta here. The prosciutto's natural saltiness and depth of flavor are intensified as it turns into a delectable, crunchy element that adds a satisfying contrast to the other ingredients. I sprinkle any herbs I have right into my eggs while they're frying - scallions, chives, and cilantro are my favorite but anything goes. Herbs are a non-negotiable in pretty much everything I make, but especially an egg taco, you need the zing. Cooking the tortilla in the hot sauce really does something special to every bite and the final masterpiece is a breakfast taco that truly smacks.

INGREDIENTS
  • 2 tortillas (I use grain free from Siete)
  • 2 eggs
  • 2-4 slices of prosciutto
  • 2 slices sharp cheddar cheese
  • 1/2 avocado, sliced
  • Herbs (I use whatever I have on hand – scallions, chives, cilantro are my favorites for this)
  • Hot sauce
  • Salt & fresh black pepper
INSTRUCTIONS
  1. Spray your pan with cooking spray or use a little butter. Pan fry the prosciutto, flipping occasionally until it’s crispy on both sides. Remove from pan and set aside.
  2. Over medium heat, add a few splashes of hot sauce to the pan and drop your tortilla in. Flip it over coating both sides in the sauce. Crack your eggs directly onto the tortillas, top with herbs, salt and pepper.
  3. Cover the pan with a lid, 2-3 minutes, until the egg whites are cooked and yolk is still runny. Add your cheese and prosciutto. Transfer to a plate and top with avocado and more hot sauce.
