INGREDIENTS
for the veggies:
- 1 zucchini, sliced diagonally into thick rounds
- 1 yellow squash, sliced into thick rounds
- 1 bell pepper, cut into large chunks
- 1 red onion, cut into wedges
- 1 pint cherry tomatoes
- 1 small head of broccoli, cut into florets with a flat surface for direct contact to the grill
- olive oil
- salt and pepper to taste
for the herb vinaigrette:
- assorted chopped fresh herbs: chives, parsley, oregano, basil
- 2 tablespoons red wine vinegar
- 1/4 cup olive oil
- flakey salt
- fresh black pepper
