grilled veg with herb vinaigrette

A platter of grilled veggies is what my taste buds scream for in the summer. Simple and flavorful, these grilled vegetables are elevated to the next level with an herb vinaigrette. Make sure to dress the veg while they are still warm so they soak up all that good herby flavor. Feel free to use any other vegetables you like - mushrooms, asparagus, eggplant are also great.

INGREDIENTS

for the veggies:

  • 1 zucchini, sliced diagonally into thick rounds
  • 1 yellow squash, sliced into thick rounds
  • 1 bell pepper, cut into large chunks
  • 1 red onion, cut into wedges
  • 1 pint cherry tomatoes
  • 1 small head of broccoli, cut into florets with a flat surface for direct contact to the grill
  • olive oil
  • salt and pepper to taste

 

for the herb vinaigrette: 

  • assorted chopped fresh herbs: chives, parsley, oregano, basil
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • flakey salt
  • fresh black pepper
INSTRUCTIONS
  1. In a large bowl, toss the sliced veg with the olive oil, salt, and pepper.
  2. In a separate bowl, whisk together red wine, olive, salt and pepper. Add in the fresh chopped herbs.
  3. Preheat your grill to medium-high heat.
  4. Place the vegetables on the grill. You can use a grill basket or skewers to make grilling easier (specifically for the tomatoes).
  5. Grill the veg for about 3-5 minutes per side, or until they are tender and have nice grill marks. Turn the vegetables occasionally to ensure they cook evenly.
  6. Transfer the grilled veg to a serving platter and spoon over the herb vinaigrette while the vegetables are still warm.
