twice baked sweet potatoes

INGREDIENTS
  • 2 Japanese sweet potatoes
  • 2 purple sweet potatoes
  • Chives, chopped
  • 2 tablespoons grass-fed butter
  • Olive oil
  • Flakey salt
INSTRUCTIONS
  1. Preheat your oven to 425°F.
  2. Wash and dry the potatoes. Rub the potatoes all over with oil and sprinkle liberally with salt. Place the potatoes on a baking sheet and roast until tender when pierced with a fork, 40 to 45 minutes.
  3. Remove potatoes from the oven and let them cool slightly for at least 10 minutes. Carefully cut each potato in half lengthwise and scoop out the inside, leaving a small border of potato to keep the skin intact.
  4. In a bowl, combine the scooped-out potato, butter, salt and chives. Mash until smooth.
  5. Spoon the mixture back into the potato skins. Top with more chives and flakey salt.
  6. Place the filled potatoes on a baking sheet and bake for an additional 15 minutes.
