- 1 pound ground chicken
- 1 garlic clove, finely chopped
- 1 teaspoon ginger, finely chopped
- 4 green onions, chopped
- 1 cup shredded carrots
- 1 tsp red pepper flakes (more or less depending on your spice preference)
- 1/3 cup cilantro
- 1/4 cup toasted peanuts or cashews, chopped
- 1 can sliced water chestnuts, roughly chopped
- 1 teaspoon sesame seeds
- Salt and pepper
- Bibb lettuce (butterhead or romaine work too)
for the sauce
- 2 tablespoons of rice vinegar
- 1/4 cup coconut aminos (or soy sauce)
- 1/4 cup peanut butter
- 1 tsp honey
- 2 tablespoon sesame oil
- 1/4 cup tahini
- 1/4 cup water (or more to thin out your sauce as needed)
- Salt and pepper
