spicy peanut chicken lettuce wraps

This is one of my go-to weeknight dinners - quick, easy, and healthy. These lettuce wraps are packed with flavor and on the table in under 20 minutes. I serve these as traditional lettuce wraps but it would also be great over rice or rice noodles. I use coconut aminos for a soy-free option, but feel free to sub in soy sauce if that's all you have on hand.

INGREDIENTS
  • 1 pound ground chicken
  • 1 garlic clove, finely chopped
  • 1 teaspoon ginger, finely chopped
  • 4 green onions, chopped
  • 1 cup shredded carrots
  • 1 tsp red pepper flakes (more or less depending on your spice preference)
  • 1/3 cup cilantro
  • 1/4 cup toasted peanuts or cashews, chopped
  • 1 can sliced water chestnuts, roughly chopped
  • 1 teaspoon sesame seeds
  • Salt and pepper
  • Bibb lettuce (butterhead or romaine work too)

for the sauce

  • 2 tablespoons of rice vinegar
  • 1/4 cup coconut aminos (or soy sauce)
  • 1/4 cup peanut butter
  • 1 tsp honey
  • 2 tablespoon sesame oil
  • 1/4 cup tahini
  • 1/4 cup water (or more to thin out your sauce as needed)
  • Salt and pepper
INSTRUCTIONS
  1. Whisk together sauce ingredients until smooth and well combined. If you use a firmer peanut butter you may need to microwave the mixture for 30-60 seconds in order to melt it to mix well with the other ingredients. Add an extra tablespoon of water to thin out the sauce as needed.
  2. Heat a large pan over medium heat, add olive oil and ground chicken. Season with salt, pepper and red pepper flakes. Cook until chicken starts to lightly brown and add the garlic and ginger, cooking for another minute. Add in the green onion, shredded carrots and water chestnuts. Mix together and cook for another 1-2 minutes.
  3. Add the sauce and simmer on low heat until the chicken mixture is evenly coated and heated through. To finish, add in the sesame seeds, cilantro and chopped peanuts.
  4. Serve in lettuce leaves or over rice. To make the lettuce cups, cut the bottom part off the lettuce and carefully peel away each leaf. Layer 2-3, depending on their size and spoon chicken on top. Garnish with more sesame seeds and chopped nuts for a little crunch.
