INGREDIENTS
  • 1 1/2 cups oats
  • 1 cup pitted dates, about 7-8
  • 1/4 cup shredded coconut flakes, unsweetened
  • 1/4 cup chia seeds
  • 1/4 cup walnuts
  • 1/4 cup peanut butter
  • 1/4 cup coconut milk (or any nut milk you prefer)
  • pinch of sea salt
  • optional: melted chocolate and/or extra coconut flakes for coating the oat balls
INSTRUCTIONS
  1. Combine Ingredients: In a food processor, combine all ingredients. Pulse until combined and sticky in texture.
  2. Form Balls: Using a cookie scooper or 1 tablespoon size scoop, roll the mixture between your palms to form balls.
  3. Optional Coating: If desired, you can roll the formed balls in shredded coconut or dip in melted chocolate. I like to melt the chocolate with a little bit of coconut oil for a glossy finish.
  4. Let the balls set up in the fridge, then store in airtight container and refrigerate.
