INGREDIENTS
  • 2 Japanese sweet potatoes
  • 2 purple sweet potatoes
  • Chives, chopped
  • 2 tablespoons grass-fed butter
  • Olive oil
  • Flakey salt
INSTRUCTIONS
  1. Preheat Oven: Preheat your oven to 425Β°F.
  2. Bake Potatoes: Wash and dry the potatoes. Rub the potatoes all over with oil and sprinkle liberally with salt. Place the potatoes on a baking sheet and roast until tender when pierced with a fork, 40 to 45 minutes.
  3. Prepare Filling: Remove potatoes from the oven and let them cool slightly. Carefully cut each potato in half lengthwise and scoop out the inside, leaving a small border of potato to keep the skin intact.
  4. Mix Ingredients: In a bowl, combine the scooped-out potato, butter, salt and chives. Mash until smooth.
  5. Fill Potatoes: Spoon the mixture back into the potato skins. Top with more chives and flakey salt.
  6. Bake Again: Place the filled potatoes on a baking sheet and bake for an additional 15 minutes.
