INGREDIENTS
  • 4 cups basil leaves
  • 2 cloves garlic, peeled
  • 1/2 cup walnuts
  • 1/2 cup parmesan cheese or pecorino romano, grated
  • 1 lemon, zest and juice
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup olive oil
  • salt and pepper
  • Your favorite pasta (this is my favorite gluten free brand)
INSTRUCTIONS

for the pesto

  1. In a blender or food processor, combine the basil, garlic cloves, walnuts, cheese, lemon zest and juice, red pepper flakes and salt and pepper. Pulse a few times to break down.
  2. Slowly stream in the olive oil, blending until smooth and emulsified. Taste and adjust seasoning.
  3. Use as a sauce on your favorite pasta or store in the fridge to use on paninis or on grilled shrimp or chicken.

 

for the pasta

  1. Bring a large pot of water to a boil. Season heavily with salt and cook pasta until al dente, reserving some cooking water.
  2. In a mixing bowl or sauce pan off the heat, combine the pasta and pesto sauce, adding in reserved pasta water until desired consistency is reached and the sauce has a glossy finish. You want to add the pesto sauce off the heat, otherwise the basil will cook and turn the sauce brown.
  3. Garnish with more basil, parmesan and burrata if you’re feeling crazy!
